Recipe ingredients

  • Tapenade purée
  • 4 garlic cloves
  • 6 anchovies, desalted
  • 40 medium size black olives, pitted*
  • 20 capers
  • Pinch of pepper
  • 1 cup (250 mL) olive oil *
  • Juice of 1 lemon
  • 1 commercial short crust pastry
  • 1 goat cheese log
  • 3 ripe tomatoes, sliced
  • Sufficient quantity of extra-virgin olive oil *

Preparation

Tapenade Purée
Crush garlic cloves.
Use a pestle and mortar or fork to crush olives, anchovies, garlic and capers. Add pepper.
Drizzle olive oil.
Blend well to obtain a smooth paste.
Add lemon juice.

Preheat oven to 350°F/180°C.
Spread 1/4 cup (60 mL) of tapenade purée on the short crust pastry.
Cut goat cheese in rounds.
Place the cheese on the tapenade.
Garnish with slices of tomatoes.
Drizzle a little olive oil on tomatoes.
Bake in the oven about 30 minutes.

Suggestion

Refrigerate the rest of the tapenade for use later as a spread.
