Tuna, Orange and Grapefruit Ceviche

Recipe ingredients
- 1/2 cup (125 mL) Sunkist freshly squeezed lemon juice
- 1/4 (60 mL) cup extra virgin olive oil*
- 1/2 tsp. (2 mL) minced garlic
- 1 tsp. (5 mL) salt
- 1/2 tsp. (2 mL) fresh ground black pepper
- 1 lb (450 g) sushi grade tuna, in cubes of 1 cm
- 2 Tbsp. (30 mL) toasted pumpkin seeds
- 1 medium Sunkist orange, segmented and seeded
- 1/2 large Sunkist grapefruit, segmented and seeded
- 3 Tbsp. (45 mL) chopped cilantro
- 2 Tbsp. (30 mL) chopped chives
Preparation
In a large bowl, mix together the lemon juice, oil, garlic, salt and pepper. Add tuna in the bowl and toss.
Add the pumpkin seeds, orange and grapefruit segments, cilantro and chive. Cover and refrigerate for at least one hour.
Serve in a small bowl or martini glass and garnish with tortilla chips.
