Recipe ingredients

  • 20 shrimps size 31-40, thawed
  • 20 Irresistible scallops*, size 60-80, thawed
  • 1 yellow pepper, cut into large pieces
  • 1 red onion, cut into large pieces
  • 3 Tbsp. (45 mL ) olive oil*
  • 2 cups (500 mL) orange, peach and mango juice*
  • 2 Tbsp. (30 mL) fresh mint, chopped
  • Freshly ground pepper to taste
  • 2 oranges, unpeeled, cut into 1-inch (2 cm) slices

Preparation

On 4 wooden skewers (pre-soaked for 10 minutes in lukewarm water), prepare the brochettes alternating shrimps, scallops, green peppers and onions.

Place the brochettes in a large, airtight container. Add oil, fruit juice, mint, pepper and orange slices. Close and shake vigorously to ensure that the marinade soaks into the food. Marinate in the refrigerator approximately 3 hours.

Oil the barbecue grill well and preheat to high. Reduce heat to medium-low and place the brochettes and orange slices on the grill. Cook approx. 5 minutes, basting with the marinade and turning often.
