Recipe ingredients
- Sauce
- 2 oranges
- 1 Tbsp. (15 mL) fresh ginger, finely chopped
- 1/3 cup (80 mL) orange juice*
- 2 Tbsp. (30 mL) brown sugar
- 1 tsp. (5 mL) zest of lime, finely chopped
- 1 tsp. (5 mL) zest of lemon, finely chopped
- 1 x 14 oz. (1 x 400 g) frozen High Liner haddock filets, thawed
Preparation
Preheat the barbecue to medium heat.
Peel the oranges to discard the white pulp under the skin and remove the sections only. Set aside.
In a casserole, add all ingredients for the sauce except the orange sections.
Boil 2 to 5 minutes while stirring.
As cooking is completed, add the orange sections, let simmer 2 minutes.
On a double sheet of aluminum paper or grill basket, place the haddock filets.
Cook 3 to 5 minutes.
To serve, mask the filets with the citrus fruit sauce.
