Recipe ingredients
- 5-6 large ripe tomatoes
- 8 oz (227 g) tofu, slices
- 1/4 cup (60 mL) fresh parsley, finely chopped
- 2 Tbsp. (30 mL) chive, chopped
- 3 Tbsp. (45 mL) Irresistibles extra virgin olive oil *
- 2 Tbsp. (30 mL) Irresistibles white wine vinegar*
- 1/4 tsp. (1 mL) sugar *
- Sea salt and pepper to taste
Preparation
Cut tomatoes in thick slices.
In a shallow dish, layer tomato and tofu slices with parsley and chives.
In a bowl, mix oil, wine vinegar, sugar, salt and pepper.
Pour over tomatoes.
Let stand in refrigerator 1 to 2 hours.
Serve at room temperature.
