Recipe ingredients
- 1 package Schneider's Juicy Jumbos, cut into pieces
- 12 leaves fresh basil
- 1/2 eggplant, cut into 1-in. (2-cm) cubes
- 1 red onion, cubed
- 12 coffee mushrooms
- 8 cherry tomatoes
- 1/2 cup (125 mL) balsamic vinegar*
- 2 Tbsp. (30 mL) fresh-squeezed lemon juice
- 1/4 cup (60 mL) tomato-basil flavoured oil*
- 1/4 cup (60 mL) olive or canola oil*
- 1 Tbsp. (15 mL) chopped fresh oregano
- Salt and pepper to taste
Preparation
Soak skewers in warm water for some 10 minutes.
Preheat barbecue to medium-high.
Thread cut up frankfurters onto skewers, alternating with basil leaves, eggplant, onion, mushrooms and tomatoes.
Place skewers in a large dish and add remaining ingredients.
Cover and refrigerate for about 30 min.
Remove kabobs from marinade, drain and put on hot grill.
Cook 6-8 min., turning occasionally.
Serve with pasta dressed with garlic and fresh Parmesan.
