Recipe ingredients
- 1 pear
- 2 apricots
- 1 peach
- 1 Tbsp. (15 mL) lemon juice*
- 1 cup (250 mL) pear juice
- 1 sprig fresh thyme
- 1 package EXCELDOR satay-style maple-marinated turkey kabobs
- 2 Tbsp. (30 mL) Dijon mustard*
- 1/4 cup (60 mL) walnut pieces*
- 1/3 cup (80 mL) whipping cream*
Preparation
Wash, trim and quarter fruit. Place in a bowl and add lemon and pear juice and thyme and steep at least 30 minutes.
Soak wooden skewers in lukewarm water.
Preheat barbecue to medium-high.
Remove fruit from marinade and thread onto soaked skewers. Reserve marinade.
Baste kabobs with Dijon mustard and barbecue according to package instructions.
Barbecue fruit kabobs 5-7 minutes, turning them often. Watch that turkey and fruit kabobs don't burn.
When turkey kabobs are done and the fruit ones nicely browned, remove from grill and keep warm.
In a saucepan, combine reserved marinade with walnuts and cream. Bring to a boil and reduce about 5 minutes until thick as sauce. Remove thyme and pour over kabobs. Serve with a summer salad.
