Recipe ingredients
- Tapenade
- 1/2 cup (125 mL) pitted black olives*
- 2 tsp (10 mL) capers, drained
- 1/4 cup (60 mL) extra virgin olive oil*
- 1 tsp (5 mL) lemon juice
- Ground black pepper to taste
- 1 1/3 lb (600 g) ground horse meat
- 2 eggs*
- 1Tbsp (15 mL) dry basil
- 4 sesame seed hamburger buns*
- 4 slices of Canadian Swiss cheese *
Preparation
In a food processor, purée ingredients for the tapenade to obtain a slightly granular mix. Set aside.
Oil barbecue grill and preheat to high.
Mix meat, eggs and basil. Form 4 patties about 3/4 in (1,5 cm) thick.
Place meat on grill, cook approximately 5 to 6 min. each side.
When meat is cooked, lower heat to minimum.
Place open buns on grill.
Spread 2 Tbsp (30 mL) of tapenade on each burger, then a slice of cheese.
Continue cooking until cheese starts melting.
Top the burgers with your favourite garnishes.
Suggestion
You can substitute lean ground veal for horse meat.* We recommend Selection and Irresistibles products.
