Recipe ingredients

  • Tapenade
  • 1/2 cup (125 mL) pitted black olives*
  • 2 tsp (10 mL) capers, drained
  • 1/4 cup (60 mL) extra virgin olive oil*
  • 1 tsp (5 mL) lemon juice
  • Ground black pepper to taste
  • 1 1/3 lb (600 g) ground horse meat
  • 2 eggs*
  • 1Tbsp (15 mL) dry basil
  • 4 sesame seed hamburger buns*
  • 4 slices of Canadian Swiss cheese *

Preparation

In a food processor, purée ingredients for the tapenade to obtain a slightly granular mix. Set aside.
Oil barbecue grill and preheat to high.
Mix meat, eggs and basil. Form 4 patties about 3/4 in (1,5 cm) thick.
Place meat on grill, cook approximately 5 to 6 min. each side.
When meat is cooked, lower heat to minimum.
Place open buns on grill.
Spread 2 Tbsp (30 mL) of tapenade on each burger, then a slice of cheese.
Continue cooking until cheese starts melting.
Top the burgers with your favourite garnishes.

Suggestion

You can substitute lean ground veal for horse meat.
