Recipe ingredients

  • 2 Tbsp. (30 mL) mayonnaise*
  • 2 Tbsp. (30 mL) unsweetened applesauce*
  • 1 Tbsp. (15 mL) parsley flakes
  • 4 2.5-in. (6-cm) lengths of whole-wheat baguette*
  • 3.5 oz. (100 g) shaved roast pork*
  • 1/2 cup (125 mL) alfalfa sprouts

Preparation

In a bowl, mix mayonnaise, applesauce and parsley together. Set aside.
Using your fingers, remove soft inner part of baguette sections.
Using a spoon (or spoon handle if hole is too small), baste inside of baguette sections with mayonnaise mixture.
Stuff pieces of baguette with shaved pork.
Stand stuffed baguette sections up in a plate and fill holes with alfalfa sprouts.
