Recipe ingredients
- 1 cup (250 mL) shelled fresh fava beans
- 1/4 cup (60 mL) toasted pine nuts
- 1/2 cup (125 mL) grated fresh Parmesan
- 2 Tbsp. (30 mL) lemon juice
- 1 tsp. (5 mL) fleur d'ail (garlic flower)
- 1/4 cup (60 mL) olive oil*
- 1/2 tsp. (2 mL) cumin
- 1/2 tsp. (2 mL) dry coriander
- Salt and pepper to taste
Preparation
Cook beans in boiling water for 20 minutes. Set aside.
In food processor, purée beans with pine nuts, Parmesan, lemon juice, fleur d'ail, cumin, coriander and olive oil, until smooth.
Season to taste with salt and pepper.
Suggestion
Fleur d'ail, which is available in your Metro store's produce department, is more digestible than garlic cloves.Serve slathered on toasted country bread.
