Recipe ingredients
- 2 apples
- 1 Quebec eggplant
- 1 Tbsp. (15 mL) olive oil*
- 1 Tbsp. (15 mL) butter*
- Salt and pepper
- 3 1/2 oz. (100 g) chèvre (creamy goat's cheese)
Preparation
Preheat oven to broil.
Cut apples and eggplant into thin slices. Heat oil and butter in a skillet. Brown slices. Season with salt and pepper.
In an ovenproof dish, arrange slices in 4 stacks, alternating apple and eggplant layers and finishing with apple slices. Top with cheese and broil until cheese melts and begins to colour.
Carefully transfer stacks to plates and serve immediately.
