Apple Fans with Canadian Saint-Paulin

Recipe ingredients
- 4 cups (1 L) young lettuce leaves
- 1 carrot, grated
- Balsamic vinegar
- 2 large red apples, well washed
- Lemon juice
- 1 1/2 cups (375 mL) Canadian Saint-Paulin, shredded
- 1/2 cup (125 mL) walnuts, coarsely chopped
- Freshly ground black pepper
Preparation
Divide lettuce leaves equally between four plates and garnish with a little grated carrot. Lightly sprinkle with balsamic vinegar. Set aside.
Preheat oven broiler. Peel and core apples. Slice in half, then into fan shapes. Immediately sprinkle apples with lemon juice so they do not discolour. Place apple fans on a cookie sheet, top with cheese and walnuts.
Broil under top grill until cheese and walnuts are lightly golden. Remove from oven and carefully place on top of lettuce. Season with pepper to taste and serve right away.
