Recipe ingredients
- 1 whole chicken, approximately
- 2 1/2 lb. (1.2 kg)
- 1 1/2 cups (375 mL) any marinade
- 1 12-oz. (355-mL) can of beer
Preparation
Put the chicken in a large resealable plastic bag and add marinade. Close and shake bag to coat chicken evenly. Refrigerate for 2 to 12 hours.
On a 2-burner barbecue, preheat one to medium.
Open the can of beer and pour out about 1/4 cup (60 mL). Using the
sharp end of a bottle opener, punch some holes in the top of the can.
Take chicken out of the bag. Discard marinade.
Holding chicken upright, insert the can in the cavity. The can is standing upright in the chicken.
Stand chicken upright in a dripping pan and put on the grill over indirect
heat. Close the lid.
Cook about 45 minutes then open and turn the chicken 180 degrees to ensure even cooking.
Close the lid and continue cooking for another 45 minutes or until a meat thermometer inserted in the breast reads 185°F (85°C).
Take chicken off the barbecue.
Cool upright for 15 minutes.
Gently remove the can. Throw out the can and its contents.
Cut and serve chicken immediately.
Suggestion
Chicken broth, lemonade or ginger ale can be substituted for beer. Pour 1 1/4 cups (10 oz.) into an empty soft drink or beer can.* We recommend Selection and Irresistibles products.
