Recipe ingredients
- 2 Tbsp. (30 mL) butter*
- 1 small red onion, chopped
- 1 Tbsp. (15 mL) brown sugar
- 1/4 tsp. (1 mL) vinegar
- 4 10-in (25-cm) tortillas
- 1 1/2 cups (375 mL) roasted
- red pepper, in strips
- 1 cup (250 mL) cooked chicken, in strips
- 1 1/2 cups (375 mL) grated smoked Gouda
- Salsa to taste
- Sour cream (optional)
Preparation
Preheat oven to 450°F (230°C).
In a skillet, melt butter over medium heat. Add onion, sugar and vinegar and cook, stirring, for 10 minutes or until onion is golden brown.
Remove from heat and cool.
Sprinkle cheese over half of each tortilla. Top with onion, peppers and chicken.
Fold other half over.
Transfer to a baking sheet and bake until tortillas begin to brown and
cheese melts.
Cut each tortilla into 4 pieces and serve with salsa and sour cream.
