Recipe ingredients

  • 1 Tbsp. (30 mL) Irresistibles extra virgin olive oil*
  • 3 1/2 lb. (5 kg) blade roast
  • 1/3 cup (80 mL) red wine or beef broth*
  • 1 cup (250 mL) shredded green cabbage
  • 4 Irresistibles quartered potatoes*
  • 1 cup (250 mL) diced, peeled turnips
  • 1 cup (250 mL) sliced, peeled carrots
  • 1 Tbsp. (15 mL) crushed green peppercorns
  • Salt and pepper to taste

Preparation

Heat oil in a Dutch oven on medium-high heat. Brown beef 3 minutes per side .
Add wine and cook 2 minutes. Cover and cook 30 minutes on low heat.
Add cabbage, potatoes, turnips, carrots and green peppercorns.
Continue cooking for 1 hour.
Season to taste.

Suggestion

Brown the meat on all sides to preserve the juices and enhance the flavour.
