Recipe ingredients
- 1 Tbsp. (15 mL) olive oil
- 1 lb. (500 g) Quebec pork stewing cubes, lightly floured
- 1 to 2 garlic cloves to taste, chopped
- 3 slices of pancetta (or back bacon), cut in thin strips
- 1 28 oz. (798 mL) can of Italian style stewed tomatoes
- 3/4 cup (200 mL) dry red wine
- 1 onion, cut bite-size
- 1 summer squash, cut bite-size
- Fresh oregano, chopped, to taste
- Salt and fresh ground pepper to taste
Preparation
Heat the oil over medium-high heat in a thick bottom skillet. Brown the pork cubes, garlic and pancetta 3 to 4 min. Add the tomatoes and wine; cover and let simmer over low heat 30 min.
Fold in the onion and summer squash and let simmer uncovered another 30 min. Season with oregano, salt and pepper to taste. Serve on fresh pasta.
