Recipe ingredients
- 1 Tbsp. (15 mL) olive oil
- 4 x 5 oz. each (4 x 150 g) boneless pork chops
- 2 to 4 cloves of garlic to taste, crushed
- 1 small eggplant
- 1 green pepper
- 1 small summer squash
- 1 onion, coarsely chopped
- 3 fresh tomatoes, cubed
- 2 tsp. (10 mL) dried oregano
- Salt and pepper to taste
Preparation
Heat the oil in a large non-stick skillet over medium heat. Brown the pork 3 to 4 min. Remove from the skillet, cover and let stand.
In the same skillet, brown garlic, eggplant, pepper, summer squash and onion 7 to 8 min. Add tomatoes, oregano and pork; reheat 1 min. Season to taste. Garnish with black olives, if desired. Serve with a loaf of country-style bread and romaine lettuce salad.
