Recipe ingredients
- 8 lamb thigh steaks, bone-in, 3 oz (90 g) each
- Fresh chopped parsley to taste
- Marinade
- 1 lemon, zest and juice
- 1 cup (250 mL) red wine
- 1/4 cup (60 mL) extra virgin olive oil
- 1 Tbsp. (15 mL) maple syrup
- 2 cloves garlic, crushed
- 1/2 cup (125 mL) fresh chopped parsley
- Pepper to taste
Preparation
Remove the lemon zest and julienne.
Cut the lemon in half and squeeze over a large shallow glass dish.
Add half the lemon zest and the rest of the marinade ingredients to the juice. Mix well. Reserve some of the marinade for basting.
Put the steaks in the rest of the marinade and coat well. Cover and marinate at least 2 hours in the refrigerator.
Preheat the barbecue to medium.
Remove steaks from the marinade and drain well.
Grill 6 to 7 minutes per side, to taste.
Baste with the reserved marinade while cooking.
Top with fresh parsley and zest of lemon.
