Recipe ingredients

  • 1 lb. (450 g) fresh lamb (shoulder or leg), cubed
  • 1 green pepper, in chunks
  • 2 red apples, cut in eight pieces
  • Marinade
  • 1/2 cup (125 mL) white wine
  • 1/4 cup (60 mL) extra virgin olive oil
  • 1/2 cup (125 mL) orange juice
  • 1 Tbsp. (15 mL) chopped garlic
  • 3 Tbsp. (45 mL) fresh chopped mint
  • 1 Tbsp. (15 mL) zest of orange
  • 1/4 tsp. (1 mL) ground ginger

Preparation

In a glass bowl, mix all the marinade ingredients. Reserve a small amount.
Put the lamb cubes in the rest of the marinade and marinate in the refrigerator at least 4 hours, turning from time to time.
Preheat the barbecue to medium high.
thread the cubes of lamb on 4 brochettes, alternating with chunks of pepper and apple.
Put brochettes on the oiled grill and cook 6 to 8 minutes per side, basting regularly with the reserved marinade.

Suggestion

For the meat to cook evenly, the cubes of lamb should be the same size. Tender, fast-cooking lamb is a good choice for brochettes.
