Recipe ingredients

  • 1/4 cup (60 mL) olive oil*
  • 1 1/2 lb. (675 g) green and yellow summer squash, halved
  • 1/2 lb. (225 g) mini zucchinis, halved
  • 1/4 cup (60 mL) water
  • 1/3 cup (80 mL) capers, drained and coarsely chopped
  • 2 tsp. (10 mL) commercial pesto
  • 1/2 cup (125 mL) pine nuts
  • 3 Tbsp. (45 mL) fresh lemon juice
  • Salt and pepper to taste

Preparation

In a large pot, heat oil over medium-high heat, add summer squash, zucchinis and water. Cover and lower heat to medium. Cook until soft but slightly crisp; about 4 min.
Place cooked vegetables in a large bowl and add the remaining ingredients. Mix to coat vegetables well.
Serve warm or as warm vegetables.
