Recipe ingredients
- 3 Tbsp. (45 mL) canola oil*
- 1/2 Jalapeno pepper, finely chopped (without seeds)
- 6 yellow summer squash, halved
- 6 green summer squash, halved
- 1/2 red onion, minced
- 1 garlic clove, chopped
- 2 Italian tomatoes, diced
- Salt and ground pepper, to taste
- 1 cup (250 mL) mozzarella*, grated
- 1 cup (250 mL) Swiss cheese*, grated
Preparation
Preheat oven to 450ºF (230ºC).
In a large skillet, heat oil over medium-high heat and add vegetables except tomatoes. Sauté 2 min.
Add tomatoes and continue cooking 1 min.
Add salt and pepper.
Transfer to an ovenware dish, cover with the two cheeses and place in the oven.
Cook 6 to 8 min. or until cheese is golden and vegetables are cooked.
Serve.
Suggestion
For spicier flavour, add jalapeno pepper or use the seeds.* We recommend Selection and Irresistibles products.
