Recipe ingredients

  • 12 cups (3 L) chicken broth
  • 4 carrots, diced
  • 1 stalk celery, diced
  • ½ small rutabaga, diced
  • 1 onion, minced
  • 1 19-oz. (540-mL) can, diced tomatoes
  • Salt and pepper to taste

Preparation

In a large pan, bring chicken broth to a boil. Add carrots, celery, rutabaga and onion. Simmer approximately 30 minutes.

Add tomatoes, salt and pepper. Simmer for another 30 minutes or until vegetables are cooked.

Suggestion

Starting the meal with a bowl of soup takes the edge off your hunger, helping you limit your intake of carbohydrates.
