Recipe ingredients

  • 1 Tbsp. (15 mL) Irresistibles olive oil*
  • 1 Tbsp. (15 mL) fresh lemon juice
  • Salt and pepper to taste
  • 4 fish fillets (trout, cod, salmon)
  • 1/4 cup (60 mL) slivered almonds

Preparation

Preheat oven to 400°F (200°C).
In a bowl, combine oil with lemon juice, salt and pepper.
Bake fish fillets on a cookie sheet 8 minutes per inch (2.5 cm) of thickness.
Turn fillets. Spoon liquid mixture over fillets. Sprinkle with almonds. Broil until almonds are toasted.

Suggestion

Almonds, a good source of calcium (200 mg of calcium per 1/2 cup), add crunch to a dish.
