Recipe ingredients
- 2 eggs*
- 1/2 cup (125 mL) vegetable oil*
- 1/2 cup (125 mL) sugar*
- 1/3 cup (80 mL) orange juice*
- 2 tsp. (10 mL) vanilla
- 1 cup (250 mL) flour*
- 1/2 cup (125 mL) whole wheat flour*
- 1 tsp. (5 mL) baking soda*
- 1/2 tsp. (2 mL) salt
- 4 apples, peeled and cut into ½-in (1-cm) cubes
- 1 cup (250 mL) chopped walnuts
Preparation
Preheat oven to 350°F (180°C). Butter an 8”x8” (20 cm x 20 cm) baking pan.
In a bowl, beat eggs with oil, sugar, orange juice and vanilla.
In another bowl, mix flours with baking soda and salt. Add dry ingredients to egg mixture, mixing thoroughly. Stir in apples and nuts.
Pour batter into buttered pan and bake for approximately 50 minutes.
Suggestion
Apples were long considered to have little nutritional value, but that changed when the health benefits of water-soluble fibre were discovered.
