Recipe ingredients

  • 4 lamb thigh steaks, 4 oz. (120 g) 1/2 in. (1.5 cm) thick each
  • 1 Tbsp. (15 mL) fresh chopped oregano
  • Marinade
  • 3 lemons, fresh juice
  • 1/2 cup (125 mL) extra virgin olive oil
  • 3 drops Worcestershire sauce
  • Tabasco sauce to taste
  • Salt and pepper to taste

Preparation

In a glass bowl, combine all marinade ingredients. Set aside 3 Tbsp. (45 mL) for cooking.
Put lamb steaks in the remaining marinade and sprinkle with oregano. Cover and marinate about 30 minutes in the refrigerator.
Preheat the barbecue to medium.
Remove steaks from the marinade and drain well.
Grill 3 minutes on each side, basting with the reserved marinade while cooking.

Suggestion

Lamb thigh steaks are delicious served with Maître d'Hôtel, Dijonnaise or green peppercorn butter.
