Recipe ingredients

  • 1 Tbsp. (15 mL) Irresistible extra virgin olive oil*
  • 4 pepper steaks 3/4 in. (2 cm) thick, about 5 to 6 oz. (150 to 180 g) each
  • 2 Tbsp. (30 mL) butter*
  • 2 green onions, chopped
  • 1/4 cup (60 mL) red wine
  • 1 Tbsp. (15 mL) fresh chopped rosemary
  • 1 Tbsp. (15 mL) fresh chopped thyme
  • 1/2 cup (125 mL) 15% M.F. or 35%* M.F. heavy
  • 1/4 cup (60 mL) onion chive cream cheese

Preparation

Preheat the barbecue to medium.
Oil steaks and grill 3 minutes on each side.
To make the sauce in a frying pan, melt butter and brown green onions.
Deglaze with red wine.
Add herbs and reduce to 1/4.
Whisk in cream and cream cheese and.
Season and simmer 1 to 2 minutes.

Suggestion

For a different touch, use cider in place of red wine.
