Recipe ingredients
- 5 oz (150 g) Sir Laurier d'Arthabaska cheese, in thin slices
- 4 large ripe tomatoes, sliced
- 2 pinches coarse sea salt
- 1 large avocado
- 12 fresh basil or fresh tarragon leaves or a few leaves of flat parsley
- 4 Tbsp. (60 mL) virgin olive oil
- Freshly ground black pepper
Preparation
Place Sir Laurier d'Arthabaska cheese slices and tomato slices on two plates. Sprinkle tomatoes with a pinch of coarse sea salt; this will extract juice from tomatoes. Place in refrigerator for about 30 minutes.
Shortly before serving, cut avocado into slices or large cubes.
To serve, arrange avocado on tomatoes and cheese plates and sprinkle with basil, tarragon or flat parsley. Drizzle with olive oil and season with pepper. Serve at room temperature with crusty bread.
Suggestion
Try this recipe with Empereur, St-Pierre de Saurel or Le Migneron de Charlevoix cheese.For a tastier salad, add a little balsamic vinegar and/or a few thin slices of red onion just before serving.
