Recipe ingredients
- 20 large shrimps*, raw, peeled, deveined, tails on
- 4 Tbsp. (60 mL) butter*
- 4 Tbsp. (60 mL) olive oil*
- 2 tsp. (10 mL) garlic, minced
- 12 segments fresh Sunkist orange
- 12 segments fresh Sunkist lemon
- 12 segments fresh Sunkist pummelo (or grapefruit
- 8 cups (2 L) baby spinach leaves
Preparation
Slice the shrimps lengthwise along the back and halfway down, and open so they will curl during cooking. Set aside.
Melt butter and olive oil in a skillet over medium heat. Stir in the garlic and shrimp. Cook shrimp 4-5 minutes until they turn pink and tails curl.
Add fresh Sunkist orange, lemon and pummelo segments to pan, and stir gently until heated through.
Divide the spinach among 4 plates, forming a nest. Top each nest with 5 shrimps, garnish with segments of citrus fruit and pour cooking juices over the shrimp. Serve immediately.
