Recipe ingredients
- 1/3 cup (80 mL) currants
- 1/3 cup (80 mL) dry white wine
- 3/4 cup (180 mL) rice
- 1½ cups (325 mL) chicken broth
- 1/2 tsp. (2 mL) ground coriander
- 1 Tbsp. (15 mL) minced fresh coriander
Preparation
Soak the currants in the wine for at least 30 minutes.
In a pot, bring chicken broth to a boil. Add rice, currants (and wine!) and ground coriander. Cook over low heat until rice is done. Stir in minced fresh coriander and serve.
