Recipe ingredients
- 4 beef sirloin steaks, 5 to 6 oz. (150 to 180 g) each
- 4 slices cheddar cheese
- 8 mushrooms, sliced
- 4 sprigs fresh coriander
- 1 onion, chopped
- 1 Tbsp. (15 mL) cornstarch
- 1 cup (250 mL) beef consommé
- 1/2 tsp. (2 mL) fresh chopped thyme
- 1 fresh tomato, peeled, seeded and chopped
- Salt and pepper to taste
Preparation
Preheat the barbecue to medium.
With a knife, slit the edge of the steak to the centre.
Insert cheese, mushrooms and coriander. Close with a skewer.
in a pan, brown onion 1 minute in butter/oil.
Add remaining sauce ingredients and simmer 2 to 3 minutes.
Coat steaks with basting sauce and grill 3 to 4 minutes on each side, basting often while cooking.
