Recipe ingredients

  • 2 duck breasts
  • Maple syrup*, adequate quantity
  • Sauce
  • 2 Tbsp. (30 mL) French shallots, sliced
  • 1 Tbsp. (15 mL) vegetable oil*
  • 2 Tbsp. (30 mL) cider vinegar
  • 2 Tbsp. (30 mL) maple syrup*
  • 1 apple, sliced
  • 3/4 cup (180 mL) beef broth
  • 1 Tbsp. (15 mL) cornstarch*
  • Salt and pepper, adequate quantity

Preparation

Preheat oven to 350°F (180°C). Make diagonal cuts in the fat of the breasts.
In a frying pan, sear breasts on each side, fat side first.
Brush maple syrup on the fat of the breasts and cook in the oven 5 to 8 minutes. Set aside.
Sweat the shallots. Deglaze with the vinegar. Add maple syrup and the apples. Caramelize the apples lightly. Add beef broth. Thicken with corn starch diluted in a little cold water. Season to taste.
Cut the breasts diagonally in thin slices. Serve immediately with a drizzle of sauce.
