Recipe ingredients

  • 4 cups (1 L) coarsely chopped Sweet Potatoes
  • 1 onion, sliced in wedges
  • 2 garlic cloves, sliced
  • 3 Tbsp. (45 mL) olive oil*
  • 2 Tbsp. (30 mL)maple syrup *
  • 1 Tbsp. (15 mL) chopped fresh thyme
  • 1/2 cup (125 mL) pecan halves
  • 1 Tbsp. (15 mL) balsamic vinegar *
  • Salt and pepper to taste

Preparation

In large bowl, combine potatoes, onion, garlic, oil, syrup and thyme; toss well to coat. Pour vegetables into shallow roasting or jelly roll pan. Bake in 425°F (220°C) oven, turning frequently, for about 40 to 45 minutes or until vegetables are soft and golden brown. Add pecans during last 10 minutes of baking. Drizzle with vinegar. Season with salt and pepper.
