Recipe ingredients

  • Honey and lemon dressing
  • 5 tsp. (25 mL) honey*
  • 5 tsp. (25 mL) seed-style mustard
  • 5 tsp. (25 mL) Dijon mustard
  • 1/3 cup (80 mL) lemon juice
  • Salt and pepper or Tabasco to taste
  • 1/3 cup + 4 tsp. (200 mL) sunflower oil*
  • 2 Tbsp. + 2 tsp. (40 mL) parsley, chopped
  • 1 mango
  • 1 lb. (454 g) skate wing (filets)
  • 4 cups (1 L) milk or court-bouillon
  • Salt and pepper to taste

Preparation

In a bowl, dissolve the honey and seed-style mustard in the lemon juice and season. While whipping, trickle in the oil to obtain an emulsion (the same principle as mayonnaise). Add the chopped parsley to the dressing.
Peel and cut mango in fine julienne.
In a frying pan, pour the milk. Season. Cook over medium heat for 5 minutes. Poach the skate filets uncovered in the milk or court-bouillon 8 to10 minutes, without boiling or simmering.
Using a spatula, remove the filets and place them on a grill to drain them well for 15 minutes.
In a plate, place the skate, pour a little dressing and place the mango on top.

Suggestion

Adorn your presentation with a sufficient quantity of poached spinach leaves.
