Recipe ingredients
- Marinade
- 2 Tbsp. (30 mL) concentrated orange juice*
- 4 tsp. (20 mL) lime or lemon juice
- 4 tsp. (20 mL) maple syrup*
- 1/4 tsp. (2 mL) Dijon mustard*
- 2 Tbsp. (30 mL) regular breadcrumbs*
- 4 tsp. (20 mL) maple sugar, grated
- 4 monkfish brochette with vegetables
- or
- 1 lb. (454 g) monkfish fillet,cubes
- 1/2 papaya, cut up
- 1/2 red pepper, cubed
- 1/2 red onion, cubed
Preparation
In a bowl, mix all ingredients in the marinade and set aside.
Place the skewers in marinade and let in marinate for 2 hours
Cook on the barbecue over medium heat or in the oven at “broil” for 8 to 10 minutes.
