Recipe ingredients
- 4 beef rib eye steaks, 3/4 in. (2 cm) thick, 5 to 6 oz (150 to 180 g) each
- 3 Tbsp. (45 mL) extra virgin olive oil
- Marinade
- 1/4 cup (60 mL) current jelly
- 1 Tbsp. (15 mL) mustard seeds
- 2 cloves garlic, chopped
- 1 Tbsp. (15 mL) fresh chopped rosemary
- 1 Tbsp. (15 mL) fresh thyme
- Zest of 1 orange and 1 lemon
- 1/2 cup (125 mL) beef consommé
- Salt and pepper to taste
Preparation
In a small pan, melt current jelly over low heat. Transfer melted jelly to a glass bowl and add remaining marinade ingredients. Mix well.
Coat steaks in some of the marinade, cover and refrigerate 2 hours.
Reserve the rest of the marinade.
Preheat the barbecue to medium.
Remove rib eye steaks from the marinade and drain well.
Grill steaks 3 to 4 minutes per side. Set aside.
In a small pan, bring reserved marinade to a boil 1 minute.
Strain the marinade.
Pour the current marinade over the steaks.
