Recipe ingredients
- 8 leaves curly kale
- 8 oz. (225 g) feta
- Salt
- Pepper
- 2 tsp. (10 mL) Irresistible
- oregano 2 Tbsp. (30 mL) sundried tomato, cut into very thin strips
- 1 lemon, peeled,cut into 8 wedges
- Irresistible Olive oil
Preparation
Preheat the barbecue to medium heat
Blanch kale in boiling salted water for 3 minutes.
Rinse under cold water, pat dry and cut out ribs.
Top each leaf with a piece of feta, season with salt, pepper and oregano. Add sundried tomato and a lemon wedge. Fold leaf over to make a bundle. Brush with olive oil and barbecue over indirect medium heat for 10 - 15 minutes.
