Recipe ingredients

  • 2 tsp. (10 mL) icing sugar
  • 2 Tbsp. (30 mL) rice vinegar
  • 2 tsp. (10 mL) sesame oil
  • 1 Tbsp. (15 mL) chopped fresh coriander
  • 16 shrimp, size 36/40
  • 16 fresh litchis
  • 1 mango

Preparation

Dissolve sugar in vinegar. Add oil and coriander. Pour marinade over shrimp and refrigerate for 1 hour.

Open and pit litchis. Set aside.

Peel, stone and cube mango.

Make up brochettes, alternating mango, shrimp and litchis. Cook 2 minutes per side in a medium-hot BBQ over indirect heat.
