Recipe ingredients

  • 1 Tbsp. (15 mL) crushed green peppercorns
  • 1/2 cup (125 mL) butter at room temperature
  • Salt and pepper to taste
  • 1 Tbsp. (15 mL) extra virgin olive oil
  • 4 beef tournedos, 5 to 6 oz (150 to 180 g) each

Preparation

In a glass bowl, mix all the butter ingredients. Roll mixture in plastic wrap and put in the freezer 1 hour.
Preheat the barbecue to medium.
Oil the tournedos.
Cook tournedos 3 to 4 minutes per side, to taste.
Top each tournedos with a slice of green peppercorn butter.

Suggestion

Flavoured butters should be made with unsalted butter.
