Recipe ingredients

  • 4 beef tournedos, 5 to 6 oz (150 to 180 g) each
  • 1 Tbsp. (15 mL) extra virgin olive oil
  • Butter
  • 1/2 cup (125 mL) Butter
  • 1 Tbsp. (15 mL) crushed 3-colour peppercorns
  • 2 tsp. (10 mL) lemon juice

Preparation

In a glass bowl, mix all the butter ingredients. Roll mixture in plastic wrap and put in the freezer 1 hour.
Preheat the barbecue to medium.
Oil the tournedos.
Cook tournedos 3 to 4 minutes per side, to taste.
Top each tournedos with a slice of three-pepper butter.

Suggestion

As soon as the tournedos are done, top with a piece of three-pepper butter so it will melt into the hot meat.
