Recipe ingredients
- 125 g (1/4 lb) Canadian Feta
- 250 g (1 small tub) Canadian Ricotta
- 50 mL (1/4 cup) chopped fresh chives
- 2 mL (1/2 tsp) freshly ground pepper
- Your choice of coatings (ground almonds; toasted sesame seeds; dried or chopped fresh oregano, dill or parsley; ground walnuts)
Preparation
To remove excess salt, soak Feta in water for 1 hour before preparing recipe.
Drain Feta well and crumble into a bowl. Stir in Ricotta, chives and pepper. To make cheese mixture stiffer, freeze for about 30 minutes.
Roll cheese mixture into marble-sized balls.
Rolls balls in various coatings, as you wish. Arrange on a serving platter and refrigerate until serving time.
Variations
Instead of chives, use chopped fresh basil or mint, or finely chopped shallots.
For a change of taste, try with Canadian Havarti instead of Feta.
Tips
Cheese Balls with Feta and Ricotta (with or without coating) can be prepared up to 2 days ahead and frozen. Remove from freezer 1 hour before serving.
Different kinds of nuts can be used to coat cheese balls. A coffee grinder is excellent for grinding nuts.
