Recipe ingredients
- Pieces of zucchini, chopped sun-dried tomatoes, sliced black olives, sliced green onions, diced cooked potatoes, chopped red pepper, sliced mushrooms, sliced celery and/or chopped red onion
- Oregano, thyme or dill
- Cooked shrimp, diced cooked pork or other meat, chopped ham, crumbled cooked bacon, cooked salmon, diced cooked chicken
- Crumbled Feta
- Sliced Brie or Camembert
- Shredded Swiss or Havarti with herbs
Preparation
In a large frying pan, melt 30 mL (2 tbsp) butter over medium-high hear and stir-fry 500 mL (2 cups) vegetables, 1 clove of garlic and herbs, to taste, until tender. Add 125 mL (1/2 cup) meat or fish, if desired; cover and keep warm.
Beat 8 eggs with 30 mL (2 tbsp) water. For each omelette, in a 20 cm (8 inch) frying pan, melt 10 mL (2 tsp) of butter over medium heat. Pour in 125 mL (1/2 cup) of egg mixture and cook, tipping pan carefully, until eggs are set.
Top half of each omelette with a portion of the cooked vegetables and cheese, to taste. Fold omelette in half, garnish with more cheese and with chopped parsley, if desired.
