Recipe ingredients
- 2 peppers
- 2 Tbsp. (30 mL) olive oil*
- 1 Tbsp. (15 mL) cider vinegar
- 1 Tbsp. (15 mL) maple syrup*
- 1 tsp. (5 mL) chopped fresh rosemary
- 1 tsp. (5 mL) chopped fresh sage
- 2 tsp. (10 mL) chopped fresh parsley
- 1 Tbsp. (15 mL) chopped shallot
- Salt and pepper
Preparation
Preheat BBQ to medium-high. Cut peppers into 4 wedges and seed them. Using a knife, score the peppers with a lattice pattern.
In a bowl, mix, mix remaining ingredients together and pour over peppers. Marinate at least 2 hours. Drain thoroughly.
Barbecue over indirect heat.
