Recipe ingredients

  • 1 lb. (450 g) fresh pork, 2 in. (5 cm) cubes
  • Marinade
  • 1/2 cup (125 mL) pineapple juice
  • 1 Tbsp. (15 mL) grated fresh ginger
  • 2 cloves garlic, chopped
  • 1/4 cup (60 mL) soya sauce
  • 1/4 cup (60 mL) white wine
  • 1 Tbsp. (15 mL) extra virgin olive oil
  • Salt and pepper to taste
  • Fresh herbs to taste

Preparation

In a glass bowl, mix all marinade ingredients. Reserve about 60 mL (1/4 cup) in the refrigerator.
Put the cubes of pork in the rest of the marinade and coat well. Cover and marinate in the refrigerator about 1 hour.
Preheat the barbecue to medium.
Remove the cubes of pork from the marinade and drain well.
Thread pork cubes on brochettes.
Grill brochettes 4 to 5 minutes per side, brushing with reserved marinade.

Suggestion

For a spicier marinade, add 15 mL (1 Tbsp.) Dijon mustard.
