Recipe ingredients
- 1 white eggplant
- 1 tomato, sliced
- 1/4 onion, sliced very thin
- 8 basil leaves
- 8 pitted black olives*, cut in 2
- Salt and pepper to taste
- 1 Tbsp. (15 mL) olive oil*
- 2 tsp. (10 mL) lemon juice
Preparation
Preheat BBQ to medium.
Make 3 or 4 cuts lengthways in the eggplant, leaving a ½ in. (1 cm) uncut at the tip. Between eggplant slices, insert tomato, onion, basil and black olives. Season with salt and pepper. Drizzle with olive oil and lemon juice.
Wrap in foil and cook 20 - 25 minutes.
