Recipe ingredients
- 1 lb. (450 g) fresh cubed pork (4 to 6 cubes/brochette)
- 2 mangoes, peeled, cubed
- 2 red bananas, in sections
- 8 mushrooms
- 4 scallions
- Marinade
- 1/2 cup (125 mL) barbecue sauce
- 1/4 cup (60 mL) Water
Preparation
In a glass bowl, combine all marinade ingredients. Set aside a small amount of marinade.
Put the cubes of pork in the rest of the marinade and coat well. Cover and marinate about 15 minutes in the refrigerator.
Preheat the barbecue to medium.
Thread the fruit on skewers, alternating ingredients. Place on a sheet of aluminium foil and brush with the reserved marinade.
Remove the cubes of pork from the marinade, drain well and thread on brochettes.
Grill the pork brochettes 8 to10 minutes, turning from time to time.
Grill the fruit brochettes 2 to 3 minutes.
