Recipe ingredients
- 325 mL (1 1/3 cups) milk
- 45 mL (3 Tbsp.) honey*
- 3 irresistibles egg yolks*
- 45 mL (3 Tbsp.) flour*
- 1 mL (1/4 tsp.) Irresistibles vanilla*
- 125 mL (1/2 cup) Camembert, rind removed, cut into pieces
- 1 baked 9-inch pie shell, or 12 baked tart shells
- Fresh fruit, strawberries, peaches, raspberries, apricots, pears, grapes
Preparation
In a saucepan over medium heat, heat milk until steaming.
Beat honey and yolks on high speed for about 2 minutes, until thick, cream and lemon-coloured. Add flour and beat in.
Pour a little hot milk into yolk mixture to temper. Add yolk mixture to hot milk and continue cooking over low heat for 7 to 10 minutes, stirring constantly, until thickened. Do not boil.
Remove from heat and add vanilla and cheese. Stir until cheese has completely melted.
Pour this mixture (a crème pâtissière) in a bowl and cover surface with plastic wrap. Cool for 30 minutes at room temperature. Spread in pie or tart shells and arrange fruit on top. Assemble no more than a few hours before serving.
Suggestion
Removing the rind from the Camembert is easier when the cheese is very cold. By first dipping the knife in hot water, the cheese will not stick to the blade.For a stronger scented dessert, replace vanilla with saffron, freshly grated nutmeg or ground ginger.
