Recipe ingredients

  • 3 Tbsp. (45 mL) vegetable oil*
  • 1 small onion, sliced
  • 1/2 lb. (225 g) GrilRouge Angus ground beef
  • 1 Tbsp. (15 mL) ground chilli pepper
  • 1 garlic clove, minced
  • 3 Tbsp. (45 mL) tomato paste*
  • 1/3 cup (80 mL) tomato juice*
  • Salt and freshly ground pepper to taste
  • 1/2 cup (125 mL) beer*
  • 4 regular taco shells or 8 mini shells
  • 1/3 cup (80 mL) shredded nacho cheese
  • 4 leaves lettuce, shredded
  • 1 tomato, diced
  • 1 Tbsp. (15 mL) chopped flat leaf parsley

Preparation

Heat oil in a big pan, on medium. Brown onion and beef 3 - 5 minutes, stirring. Stir in chilli, garlic, tomato paste and juice. Cover and simmer 15 minutes on low.
Season to taste. Add beer. Simmer uncovered 15 – 20 minutes on low until liquid evaporates.
Put some shredded cheese and shredded lettuce in each taco shell. Top with ground beef, diced tomato and chopped parsley.
