Recipe ingredients

  • 2 Tbsp. (30 mL) crushed, Irresistibles coriander seed
  • 1 Tbsp. (15 mL) crushed, Irresistibles mustard seed
  • 1 Tbsp. (15 mL) crushed coarse black pepper
  • Salt to taste
  • 4 boneless pork chops
  • 2 Tbsp. (30 mL) Irresistibles Dijon mustard*
  • Salsa
  • 1 ripe avocado, diced
  • 1/4 cup (60 mL) chopped dried tomatoes (packed in oil or rehydrated)
  • 3 Tbsp. (45 mL) lime juice
  • 1 garlic clove, minced
  • 2 Tbsp. (30 mL) chopped fresh chives
  • Salt and Irresistibles freshly ground pepper* to taste

Preparation

Preheat barbecue to high.
In a big plate, mix spices and salt together. Spread mustard on one side of the chops.
Place chops, mustard side down, on top of spices. Keep cool while you prepare salsa.
Salsa
In a bowl, combine avocado with tomatoes, lime juice, garlic and chives. Season generously. Set aside.
Lower barbecue heat to medium. Lay chops, bare side down, on the grill or in a hot skillet. Cook 4 minutes or so per side depending on thickness of chops and desired degree of doneness.
Serve chops crusted side up with avocado salsa spooned over and around.

Beware of cross-contamination! Never dip a knife or spoon that's come into contact with meat back into the mustard jar
