Fancy Canadian Aged Cheddar and Fruit Cookies

Recipe ingredients
- 3/4 cup (175 mL) unsalted butter, at room temperature
- 1/2 cup (125 mL) sugar
- 1 egg
- 2 Tbsp. (30 mL) milk
- 1/4 tsp. (1 mL) vanilla
- 1 1/2 cups (375 mL) flour
- 1/2 cup (125 mL) shredded Canadian Aged Cheddar
- 1/4 cup (50 mL) your choice of chopped dried fruit (dried apricots, cranberries, raisins, etc.)
- 3 Tbsp. (45 mL) your choice of chopped nuts (pecans, almonds, hazelnuts, etc.) (optional)
Preparation
In a large bowl, cream together butter and sugar with an electric mixer until lemon coloured. Gradually beat in egg, milk and vanilla. Beat in flour until smooth then fold in fruit and nuts.
Shape dough into a roll, wrap well with plastic wrap and refrigerate for at least 30 minutes.
Preheat oven to 375°F (190°C).
Cover a cookie sheet with parchment paper. Slice biscuits 1/4 inch (0.5 cm) thick. Place on cookie sheet and bake in upper third of oven for 8 to 12 minutes or until lightly golden. Cool on a rack.
Use cookies for ice-cream sandwiches or serve with fresh fruit or sherbet.
Suggestion
For fancy-shaped cookies, roll out chilled dough on a floured surface to 1/4 inch (0.5 cm) thick and cut out with a cookie cutter.Store cookies in an airtight container in a dry place.
