Golden Cheddar Pancakes

Recipe ingredients
- 1 3/4 cups (425 mL) whole-wheat or all-purpose flour
- 1/4 cup (50 mL) sugar
- 1 Tbsp. (15 mL) baking powder
- 1/2 tsp. (2 mL) salt
- 1/8 tsp. (0.5 mL) ground cinnamon
- 1 1/2 cups (375 mL) shredded Canadian Aged Cheddar
- 1 large apple, cored and diced
- 2 eggs
- 1 1/4 cups (300 mL) milk
- 2 Tbsp. (30 mL) butter, melted
- 1 tsp. (5 mL) vanilla
Preparation
In a large bowl, stir together flour, sugar, baking powder, salt and cinnamon. Add cheese and apple; stir well.
In another bowl, beat eggs, milk, butter and vanilla. Add to dry ingredients and stir just until combined.
Lightly grease a non-stick frying pan and heat over medium heat. Spoon in batter, 1/4 cup (50 mL) per pancake, and spread into 4 inch (10 cm) circles. Cook until bubbles form and underside is golden. Flip pancake and continue cooking other side until golden.
